Food Safety “Five –Four “ System
1、由原料到成品实行“四不”制度.
1.The system of “ four no “ from material to finishe productions
采购员不够腐烂变质的原料; The buyer does not buy rotten material ;
保管员不验收腐烂变质的原料;storekeeper refuses the rotten material
加工人员不用腐烂变质的原料;processors do not use the rotten material
营业员(服务生)不卖腐烂变质的原料; waiters do not sell the rotten material
2、成品(食物)存放实行“四隔离”.
2.Finished productions (foods) storage in “four isolation” state
生与熟隔离;成品与半成品隔离; uncooked food seperates from the cooked food ; finieshed productions seperate from the semi-finished productions
食品与杂物、药品隔离;食品与天然冰隔离;the food seperates from the groceries and medicine ;the food seperates from the natural ice.
3、用具(食具)实行“四过关”.
Tableware used by “4 procedures”
一洗、二刷、三冲、四消毒(蒸汽或开水).Washing ->brushing ->rinsing out ->disinfection ( with steam or boiled water)
4、环境卫生采取“四定”办法.
4.environment cleaning by “four confirming “ methods
一定人、二定物、三定时间、四定质量、划片包干.
Comfirm sb.in charge of it ,confirm instruments for cleaning ,comfirm the frenquency of cleaning ,undertake the certain areas.
5、个人卫生做到“四勤”.
5.“four often” for personal health
一勤洗手、二勤剪指甲、三勤洗澡理发、四勤换工作服.
Often wash hands ,often trim the nails,often take a bath and have a haircut,often change work clothes.
