食材:
蛋白 4个
蛋黄 2个
黑巧克力 150克
细砂糖 120克
清水 30克

1.将蛋黄打入一个不锈钢锅中,用打蛋器搅打至颜色变浅,浓稠;
2.倒入200克雀巢淡奶油,隔热水加热至85度,其间要不停的搅拌;
3.加入掰成小块的黑巧克力,继续搅拌至巧克力完全融化细滑;
4.将融化细滑的巧克力浆离开热水,放一旁晾凉待用;
5.蛋白打入一个干净无水的容器中,用电动打蛋器搅打至接近干性发泡;
6.细砂糖和清水混合,稍稍搅拌,用中小火煮至120度的糖浆;
7.将120度的糖浆一点一点地缓缓地,呈直线倒入蛋白霜中,边倒入糖浆边继续用电动打蛋器搅打至接近干性发泡,待用;
8.将300克雀巢淡奶油倒入另一个干净的容器中,打出纹路;
9.将放凉的巧克力浆倒入打发好的雀巢淡奶油中,用橡皮刮刀轻搅均匀;
10.分次加入蛋白霜,继续用橡皮刮刀轻轻翻拌均匀;
11.倒入白朗姆酒,继续用橡皮刮刀轻拌均匀成为冰激凌糊;
12.将冰激凌糊倒入用热水消毒好的保鲜盒中,用刮刀抹平,盖上盖子,直接送入冰箱冷冻室冷冻约10小时以上(其间无需搅拌).
